MEXICAN PIZZA
In non-stick pan,sprayed with non-stick cooking spray, cook 3 oz lean ground
turkey until crumbled. Add 1/4 cup salsa;cook 5 minutes. Spread 1(6") corn
tortilla with 1/2 cup canned fat-free refried beans and turkey mixture; top
with 2 Tbsp shredded low-fat Monterey Jack Cheese. Bake at 350F for 10
minutes. Serve topped with 1/2 cup each shredded lettuce and chopped tomato
and 1 Tbsp. fat free sour cream.
