Breakfast Sandwich

 

 

Use a round microwaveable dish

Spray with fat-free Pam

 

I use two eggs but only one yoke.

Mix it up, but not thoroughly.

 

Sprinkle with pepper, a little salt if you must,

and some parsley flakes.

 

Microwave on High for 1 minute.  It will cook

around the edges, so I move the cooked egg to the

center and cook for another minute.

 

I then have spread some low fat Mayonnaise on one piece

of toast and lay the egg on top of that, and eat it open-face.

You could add a piece of low fat cheese if you like or some

reduced fat Parmesan cheese.
