Baked Veggies

 

I use heavy-duty tin foil—two large sheets, making a cross.

Spray it with Pam (hehehehe).

 

My favorite mixture is:

(cut up in bite size pieces)

Potatoes

Zucchini

Yellow crookneck squash

 

Carrots – sliced

Garlic – finely chopped

Onion – thinly chopped

Mushrooms

 

Now I throw each one on the tinfoil as I get it chopped up.

I spray now and then with more Pam.

Then over the top I sprinkle some reduced fat Parmesan cheese and some Italian breadcrumbs.

 

I close this all up nice and tight and put it in a 400o oven for about 50 minutes.  Then I open up the top and bake another 10 or 15 minutes.

 

Be creative and use your favorite veggies this way.  For us single people it makes enough to reheat for two or three days.
